Trail Mix Cookies

Trail mix is a great snack, sweet and salty and a great balance of carbs and protein to keep you energized. The one thing I can’t stand about trail mix though is that it’s kind of hard to eat. I’m clumsy and apparently that means I’m also a messy eater because when I eat trail mix, I end up leaving a crumb trail of leftover trail mix! So I sought out to take everything I love about trail mix and make it easier to eat. The solution? Trail Mix Cookies! These cookies have all the benefits of trail mix but everything is baked together in an easy to eat cookie that still is nutritious. We ate them as a snack, dessert, and even for a quick breakfast!

Oven 375 Degrees
Ingredients
  • ½ cup brown sugar
  • ½ cup peanut butter
  • 1 Banana
  • 1 Egg
  • 1 TSP Vanilla
  • ½ TSP Ground Cinnamon
  • 1 TSP Baking Powder
  • ¼ TSP Baking Soda
  • ½ TBSP Chia Seeds
  • 1 TBSP Ground Flax Seeds
  • 1 ½ cups of All Purpose Flour
  • 2 cups Old Fashioned Oats
  • ½ cup chopped Almonds
  • ½ cup Dried Cranberries
  • ¼ cup chopped Pistachios
Instructions
  1. Mix the brown sugar, peanut butter, banana, egg, and vanilla together until well combined
  2. In a separate bowl, combine the baking soda, baking powder, ground cinnamon, chia seeds, flax seeds, and flour
  3. Alternately add the flour and oats to the peanut butter mixture until combined.
  4. Fold in the almonds, cranberries, and pistachios
  5. Drop the dough (about a tablespoon) onto an ungreased cookie sheet and bake for 10-12 minutes
